1 green pepper (red) 1 cup
1-2 tomatoes, chopped 1 cup
½ diced cucumber ½ cup
½ minced red onion ¼ cup
¼ cilantro, chopped ¼ cup
1 T lemon juice
1 jalapeño pepper minced (small pepper)
2 tsp sea salt
Mix together, refrigerate, and serve with Cucumber slices (instead of chips!)
